My kiddos often get a hot breakfast before school. This is one of their favorites that I don’t make often but when I do, they finish it off quickly.

Serves 3

Time: 5 min prep, 10 min cook

INGREDIENTS

  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 Tbl sugar
  • 4 Tbl butter
  • 1/2 tsp vanilla extract
  • 1/4 cup milk
  • 4 eggs
  • 6 slices Texas toast (the thick bread)
  • sprinkle of powdered sugar (optional)

DIRECTIONS

Mix the cinnamon, nutmeg, and sugar in a bowl big enough to put a slice of bread in flat.

Melt the butter in a skillet over medium heat.

Whisk in the dry mixture, vanilla, and milk. Add the eggs and whisk until mixed well (don’t cook the eggs).

Pour the mixture into the bowl your dry ingredients were in.

Let the remaining mixture stuck to the skillet cook for a minute, then scrape it out & discard.

Place a piece of Texas toast in the mixture, turning over to coat both sides & place in the skillet. Flip to cook both sides.

Place on a plate & sprinkle with powdered sugar (if desired).

Add strawberries or other fruit, butter, syrup, and serve with a glass of milk or OJ.
